what can i devise to make sure soil underneath the gutter stays unaffected?

put a piece of abs drain pipe on the end of the gutter spout and divert it away from the plant a couple of feet away.

Starting to redirect the downspout.
Buy a Rain gutter extender at a local home improvement shop. Works great. They’re made of PVC…and you can get them in different lengths…meantime….just use plastic grocery bags to make a channel.
They have splash blocks for rain gutters.
